Made with the Pinot Noir grape variety. Vineyard located on hillsides in Crézancy, Bué and Sancerre. The soil is made of clay and cilicious. The harvest is destemmed before the alcoholic fermentation. The fermentation lasts during 10 to 15 days where we leave juice and skins to extract a large range of colour, tannins and flavours (fermentation temperature: 30˚C). Aging in stainless steel vats only to keep the original and traditional taste of the Sancerre Pinot. The red wine is bottled after 12 months.
